Road Trip

A friend and I are taking Tunica, Mississippi, by surprise this weekend.  She’s already there, and I’m driving over to meet her this afternoon.  This requires that I spend a couple of hours behind the wheel of the car alone.

I routinely drive from Arkansas to Illinois, so this is a relatively short trip, but it reminded me to share with you one of my road trip tricks to overcome the munchies.

When I first started this program I would plan for long trips by making chocolate and vanilla muffins, storing them in Ziploc bags, and eating them when I felt hungry.  It didn’t take long for me to figure out that some of that hunger I was feeling was actually boredom.  After swapping muffins for Hint of Mint Cookies (imagine fluffy Thin Mints), I found I could have a snack from time to time without eating a whole meal replacement.

The recipe for Hint of Mint cookies is in the program manual.  I usually get 13 or 14 cookies per batch.

2 Chocolate Meal Replacements
1 Tbsp Sugar-Free Chocolate Pudding Mix
1 Packet Splenda
1/4 Tsp Peppermint Extract

Mix the dry ingredients well, add the water and extract, and spoon onto a cookie sheet lined with parchment paper.  Bake at 325 for 10 minutes.
