Corn Muffin with Salsa

I’m not sure where I came across this recipe, but it’s very basic… and tasty.  Somewhere between sweet cornbread and a savory muffin, this is a quick recipe that I have had for dinner several times this week.


1 Creamy Potato Soup Meal Replacement
1 Tbsp. Jiffy Mix
1 Tbsp Taco Seasoning


Mix the dry ingredients, add enough water to make a thick batter, pour into a ramekin, and microwave for 60-90 seconds or until done in the center.  Top with salsa and/or fat-free sour cream.

    • That’s a tough question. Most days I have at least one chocolate shake. For me, that’s just water and chocolate meal replacement stirred briskly. I also have something with creamy potato soup. I love the pizza recipe. It takes about half an hour all together from start to finish, and a lot of that time is waiting on it to bake. If I don’t make a pizza, I’ll make one of these muffins or use the same batter in the waffle iron. If it’s a weekend morning I’ll make a cinnamon pancake. I don’t have a favorite, but I meander from one recipe to another in phases.
