Lemon Cake?

I’d like to share a recipe with you that I’ve never actually completed.  It’s a lemon cake, I imagine.  Cooked in a ramekin, It would make a nice muffin.  I’ve been afraid to cook it because the batter tastes so good. Eddie Izzard explains the problem very clearly:

Lemon Batter
1 Vanilla Meal Replacement
1 Tbsp Sugar-Free Lemon Pudding Mix
Water

Directions: Mix.  Eat.

    Okay – it’s good – I use crystal light pink lemonade. Probably about half that package (or more for a good strong taste) in a vanilla MR. Cook in a ramekin, sprayed lightly with pam. Under cook it a little. My microwave is good at 55 seconds for regular brownies, but for this, I go for 50 seconds. Nice and moist! Same ingredients make a great shake – use ice and water and blend to smoothie/icie consistency. Yum! Nice summer treat. I think I’ll have that for lunch! 🙂

    • The chocolate has been unusually gritty in the last month or so. The vanilla is nice and smooth.

        OMG SO I tried this this morning- it’s AMAZING. best batter ever! I did go ahead a nuke it for a minute in the microwave to test it out – cake is good but loses some of the flavor but still pretty good!! THANKS FOR THIS RECIPE!!!!
