Ramekins & 60-Second Muffin Recipe

One of the first pieces of equipment I purchased when I started this program was a ramekin.  A small ceramic dish that I’ve always thought of as a custard cup, Ramekins are great for microwaving muffins and mixing puddings in.  I found mine at Wal-Mart in a set of four.

If you’re looking for a quick way to make something that’s not a shake with your meal replacements, try the “60-Second Muffin.”  Pour a chocolate meal replacement into your ramekin.  Using a fork, mix in enough water to form a cake batter.  Microwave the batter for 60 seconds, or until the center is cooked through.  Tip out your muffin onto a plate and enjoy!  You can add artificial sweeteners if you like, and some use non-stick spray to coat the ramekin.  Mine come out fine without the spray viagraforgreece.com.  If you’re past week 6, try the chocolate muffin with strawberries or other fresh fruit.
