In my weight maintenance class this week we had a pot luck — each student prepared a healthy dish and brought the recipe along to share. The dish that surprised and delighted me the most was spaghetti squash. I had never seen it before, but I loved it. Late last night, I picked one up at Kroger. This afternoon, I prepared it as a starch to go along with my lunch.
It’s an odd-looking critter with entrails that resemble angel hair pasta. To cook it, I sliced it long-ways, scooped out the seeds, laid it in a dish, added 1/2 cup water to the bottom half, put the top half back on like a lid, and microwaved it for 10-12 minutes. When done, it turns this yellow color. Using a fork, I scraped the flesh out into a bowl.
The recipe in class was for a tropical noodle creation involving pineapple tidbits, bell peppers, and nutmeg. Spaghetti Squash is a wonderfully versatile starchy vegetable that takes on the flavor of whatever you pair it with. Even with spaghetti sauce, you should be delighted.
