Recipe Thursday: Roasted Beet Hummus

Ingredients
  1. 2 Med red beets
  2. 1 cup chickpeas
  3. 1 garlic clove
  4. 2 Tbsp. sesame seeds
  5. 1/4 tsp. lemon juice or to taste
  6. Extra Virgin Olive Oil
Instructions
  1. Wash and trim beets. Wrap in foil. Place in baking dish with 1/8" of water. Roast 1 hour at 375 degrees.
  2. Meanwhile, in saucepan, place sesame seeds with just enough olive oil to coat. Cook on med heat for about 5 minutes. Put aside. When beets are tender, cool, peel and cube.
  3. In food processor, add the chickpeas, toasted sesame seeds, roasted beets, garlic, lemon juice and a pinch of salt.
  4. Puree.
  5. Add more lemon juice if you like. Salt to preference.
Notes
  1. Notes from Cindy: I make hummus out of a lot of different veggies. I typically roast the veggie, add garlic (roasted or minced) and lemon juice. I puree the mixture, adding olive oil to get the consistency I want. Salt and/or pepper to taste. I've done it with beets, black beans, straight chickpeas, yellow peas and green peas...you got the idea. Whatever is around...you can be creative to your liking. For my snack I use it as a spread/dip with good bread or crackers. This takes the place of mayo.
